Introduction

Functional elements are non-conventional biomolecules in foods that have the ability to modulate one or more body metabolic processes or pathways, leading in health advantages and well-being promotion. Research has demonstrated a connection between food, health and well-being functional elements. Consequently, functional elements have health-promoting roles connected with multiple progressive steps at various phases of disease control, from initiation to growth. They can therefore be implemented efficiently in disease therapy and prevention. Therefore, the borderline between food and medicine is becoming very thin at a moment when the role of a healthy diet in stopping non-communicable diseases is well recognized. Functional elements include plant-derived, non-nutritious and biologically active chemicals that operate in the body to avoid certain non-communicable diseases from occurring.

Food contains over 900 phytochemicals. One fruit or vegetable serving (about 120g) can contain as many as 100 distinct phytochemicals. Previously, functional elements were believed to happen predominantly only as phytochemicals in plant products including whole grains, fruits and vegetables. However, in animal goods such as milk, fermented dairy products and cold water fish, probiotics, conjugated linolenic acid, long-chain omega-3, −6 and −9 polyunsaturated fatty acids and bioactive peptides are also discovered. Usually, functional elements happen in various forms in food such as glycosylated, esterified, thiolated or hydroxylated materials. They also have numerous metabolic operations that enable positive impacts in the body on several illnesses and target tissues (Balic et al. 2020).

Introduction

The art of fermentation process is developed as far back as thousand years ago without understanding the role of microorganism in it. It is believed that the process of fermentation originates in Indus valley during 7000 – 8000 BC. Archives of harappan civilization showed that different clay utensils were used for the fermented product and the agriculture and animal husbandry were fully developed during that period. It is evident from the artifacts of Egypt and middle east that the practice of fermentation was common in that part (Farnworth, 2003). The earliest practice of cheese making is originated from Falcate between Tigris and the Euphrates rivers in Iraq, 8000 years back. Later, Egyptians developed the use of yeast in wine and bread making during 4000 BC (Ross et al., 2002). Further, Sumarians prepared beer from fermented barley during 1750 BC. Earlier the fermenting process was an artisan way without any knowledge of microorganism. However, the main turning point was in 1608, when Antony Van Leeuwenhoek first established the use of a microscope and revealed the existence of microorganisms. Another, major finding was Pasteurization by Louis Pasteur in 1861 AD and this was the first report that documented the role of microorganism in fermentation. Later, there was a shift observed in the production of fermented food from local communities to large scale industry. The health effect of fermented food was first reported by Roman historian Pliny, who reported that fermented milk is beneficial for gastrointestinal complains. Further, a French paediatrician proved that Bifidobacteria in food prevents infants against infection (Grill et al., 1995).

The Seed Act 1966 was passed by the Indian Parliament on 29th December 1966 and it came into force from 2nd October, 1969. In addition, Seed Regulation Order was also passed in December 1983.

The quality of irrigation water is a crucial factor for long-term soil productivity. Poor quality water if used for a long time can make the soil less productive or even barren, depending on the amount and type of constituents present in it and the texture of the soil in question. Low or marginally saline waters sometimes appear to stimulate crop growth because of the higher amounts of nutrient ions present.

Horticulture has emerged as one of the potential agricultural enterprises in accelerating the growth of economy in India. It offers not only a wide range of options to the farmers for crop diversification, but also provides ample scope for sustaining large number of agro-industries which generate huge employment opportunities. In contrary, ‘Fruitfulness’ is the state where a fruit plant is not only having the ability of flowering and fruiting, but also carry on these fruits up to maturity. The inability of the plant to do so is known as ‘unfruitfulness’ or ‘barrenness’. Despite of profuse flowering, poor fruit retention in an orchard has been found owing to poor fruit setting at initial stage and subsequently abscission of the fruitlets. All the trees of an orchard do not bear flowers and fruits in the same extent or regularly and sometimes fail to bear flowers and fruits under similar conditions while other trees bears heavily. Such type of characteristics of trees may be attributed to unfruitfulness. Thus, all the problems affecting fruit retention upto final stage can be considered under unfruitfulness of a tree. Therefore, it is a very complex problem of an orchard and needs proper understanding for economical and effective management to maintain sustainable production of fruit crops.

CAUSES OF UNFRUITFULNESS

There are innumerable causes perceived behind unfruitfulness. Majorly, It may be due to poor root shoot ratio, lack of balance between vegetative and reproductive (fruiting) growth, heavy crop load which leads to restriction of fruit bud production and finally short of the crop in the following years.

India is an agriculture based country which is one of the few developing countries in the world. It successfully achieved Green Revolution during the late 1960s (1967-68). North Eastern Himalayan Region comprises mostly of seven states viz. Arunachal Pradesh, Assam, Manipur, Meghalaya, Mizoram, Nagaland and Tripura (Gill, 2005). This Himalayan Region stands entirely different from the rest of the country not only in language, dress, food habits and festivals but also differs in agricultural practices. Among agricultural practices shifting cultivation locally known as ìJhumî or ìBunî is the most important. According to Ministry of Agriculture, Arunachal Pradesh stands first in the ìJhumî cultivation followed by Assam, Manipur, Meghalaya (Agnihotri, 2003). In Meghalaya, the problem has assumed an epidemic proportion in Gargo hills where tracts of forests are burnt. The farmers of Khasi and Jainta Hills usually practise the ìBunî cultivation.

Entrepreneurship theory has been evolving over the last 20 years and is ever growing. Mungbean is one of the most important pulse crops. It is grown in almost all parts of the country. Indicators of agricultural sustainability are a composite set of attributes or measures that embody a particular aspect of agriculture. These are quantified information, which help to explain how things are changing over time. Smyth and Dumanski (1993) define indicators as environmental attributes that measure or reflect environmental status or condition of change.

The term “diagnosis” is derived from Greek words dia (between) and gignoskein (to know). It literally means to recognizing a disease and knowing
difference between the two diseases or conditions. Therefore, diagnosis includes – determination of specific cause, abnormality of structure and

Innate immunity or innate immune response is a set of non-specific or less specific mechanisms which provides the first and rapid line of defense. All such mechanisms exist prior to the exposure to a pathogen i.e. before the onset of the infection. It is also called inborn or innate immunity. The different components of the innate immunity like physical barriers, chemical barriers, phagocytosis, inflammation etc. act to prevent the entry or elimination of the microorganisms in a non- specific manner.

Humoral immune response is the immune response which is mediated by antibodies.. It is called humoral immune response because antibodies are transferred with the ‘humour’ that is fluid or blood. Antibodies are the proteins produced by B lymphocytes.

The complement system is a group of about 30 heat labile plasma proteins which constitute nearly 15% of total serum proteins. It is a system of plasma and membrane-associated serum proteins which can elicit a highly efficient and regulated inflammatory and cytolytic immune responses to different types of infectious organisms.

Major Histocompetibility Complex (MHC) is a closely linked cluster of genes which have codes for cell surface proteins known as MHC molecules. MHC molecules were previously called as HLA molecules. Since these molecules were first discovered on the leucocytes, these were called human leukocyte antigen or HLA molecules.

The writing here in this chapter is limited to formulation & technology used for the production of buns, pizza base, chapatti, wafers, pretzels, crackers and muffins individually.

In vitro cloning is a vegetative propagation performed in the Plant Tissue Culture system. In vitro micropropagation cloning propagation is mostly applied to the vegetatively propagated plants and in particular in ornamental, fruit and in a few orchard crops and in vegetable crops besides in many forest tree species.

It is used in the control of bacterial leaf spots, blights, and cankers mostly on fruits crops and ornamentals. The Bordeaux mixture, however, can cause burning of leaves or russeting of fruit such as apples when applied in cool, wet weather. The phytotoxicity of Bordeaux is reduced by increasing the ratio of hydrated lime to copper sulfate. Copper is the only ingredient in the Bordeaux mixture that is toxic to pathogens and, sometimes, to plants, whereas the role of lime is primarily that of a “safener.”

Sixteen chemical elements are known to be important for a plant growth, their metabolic activities and survival. These can be divided in to two main groups

Canopy manipulation in fruit crops has a seasonal and a life-time development pattern and have lifelong advantage and disadvantage. The unmanaged canopy of fruit trees poses many difficulties i.e. difficulty in spray, pruning and hand harvesting, poor light penetration and interception throughout the canopy. Low early light interception, leaf area index and fraction of land covered by canopy, leading to delayed and poor cropping.

‘Extension’ acts as a potential link between ‘research’ and ‘teaching’ which also facilitates transfer of technology. In this context new concepts, like Rapid Rural Appraisal (RRA) and Participatory Rural Appraisal (PRA) are becoming more meaningful now-a-days.

i) RRA can be defined as a systematic but semi-structured study, carried out in the field by a multi-disciplinary team over a short period ranging from three days to three weeks, based on information collected in advance from published and/or unpublished sources, direct observations and interviews as to generate working hypotheses for subsequent action
ii) RRA study aims at generating information on rural life and conditions that is relevant, timely, accurate and usable in

Basic thought of Sampling

The data is very important in every field for decision making whether it is medical sciences, engineering sciences, agricultural sciences and management sciences etc. for this we need to plan the correct data. If we don’t have correct data then based on that we cannot plan good decisions and it will provide misleading results. So, to achieve or plan the right data it is necessary to have the right technique which is to be used while collecting data and an appropriate method of data collection is preferred. From this, the two important questions arise (i) what are those methods required to obtain paramount data or sample and (ii) how best to use the data or sample to estimate the characteristic of the whole population i.e., what are those methods by which we can study our population parameters to draw a proper statistical inference.

1.2. Onion types in India

• Common onion (Allium cepa var. cepa) - Large bulbs born singly and propagated through seeds. Used as salad or in curries.
• Multiplier onion or potato onion (Allium cepa var. aggregatum) -Producing small bulbs, borne in clusters and generally propagated through small bulbs. Used for seasoning curries.

1.3 Dextrose

Sweets which include dextrose have different eating qualities to those made with sucrose and glucose syrup alone. Recipes should be balanced so that the sucrose to dextrose ratio achieves the required product texture.

The incorporation of dextrose will increase the likelihood that crystallization will occur either on store or during manufacture. Replacement usage levels for dextrose normally lie between 5% and 15% of the Sucrose content

Power transmission through belts, pullies, gears, speed and size

Both stationary and portable types of agricultural machines make use of various types of power transmitting devices for doing useful work.

Some of these power transmitting devices are meant to convert rotary motion into linear motion or oscillating motion.

This transmission of power from generating unit to useful unit is possible through belts, pullies, gears, cams and couplings are also employed to transmit power. eg. The self propelled combine is a machine which employs most of the above power transmitting devices.

In some machines the belt drive is used to transmit power between two parallel shafts placed a short distance apart. In others a sprocket and chain drive is preferred, when the two parallel shafts to be operated

Farming System Approach (FSA)

Farming systems refers deliberate raising of crops,forest and fruit trees, animals including fisheries, piggery and duck farming, sericulture, mushroom, on a given unit of land to increase the productivity and profitability, to upgrade natural resource base and to achieve overall improvement in the environment

The philosophy behind shifting from cropping system to the farming system mode involves

Entrepreneurship means all the activities that a person has to do to start and run businesses in line with social, political and economic changes. Businesses include activities related to consumer likes and dislikes, feelings and behaviors, likes and dislikes and the introduction of business plans to meet all of consumer expectations. Entrepreneurship is seen as a ‘new product’ that will enable entrepreneurs to develop a new type of business organization and new business activities that address the changing needs of the community.

Animal breeding data is unique in terms of volume, statistical analysis, type of information required etc. The large volume of data extended spatially and temporally warrants additional tools in the form of databases to handle data and enable accuracy, retrieval, efficient utilization and adaptability to software. This chapter explains the nature of animal breeding data and the importance of databases with examples and explanations.

Animals are raised for some utility including meat, milk, hide, wool etc., and efforts are on to continuously improve the quality and quantity of these products. Some of the important economic traits in this regard were already discussed in earlier chapters. Record maintenance is primary for decision-making with respect to the selection of animals. The details of record maintenance including the format of registers are already explained in chapter 2. Apart from the actual information required for economic traits, pedigree information forms an important part of animal breeding data.

Correlations and regression are important components of animal breeding analysis. The genetic correlation is an important genetic parameter that is useful in the planning of breeding programs involving multiple traits. In this chapter, the basic concepts of correlation and regression including method of estimation, assumptions and test of significance are presented. An example using SPSS software is also given at the end for better understanding.
