Abstract

Agriculture is one of the most important factors contributing to the economic growth of India. Out of the 329 million hectares of India’s geographical area, about 114 million hectares are under cultivation. There are 17 essential elements required for proper plant growth. Of the mineral elements, the primary macronutrients (nitrogen, phosphorous, and potassium) are needed in the greatest quantities and are most likely to be in short supply in agricultural soils. Secondary macronutrients are needed in smaller quantities, and are typically found in sufficient quantities in agricultural soil, and therefore do not often limit crop growth. Micronutrients, or trace nutrients, are needed in very small amounts and can be toxic to plants in excess. Silicon (Si) and sodium (Na) are sometimes considered essential plant nutrients, due to their ubiquitous presence in soils.

The economy of India thrives on agriculture, the most practiced occupation in the country. Agricultural fertilizers are essential to enhance proper growth of plants and crop yield. Recently, farmers have been using chemical fertilizers for quicker and better yield. But these fertilizers endanger ecosystems, soil, plants, human and animal lives. In contrast, naturally grown biofertilizers not only give a better yield, but are also harmless to humans. This chapter aims to study the biofertilizers play a key role for enhancing economic development of sustainable agriculture (EDSA) in comparison to chemical fertilizers. Biofertilizers improve the crop yields, plant resistance, soil health, profit to farmers, and the benefit to cost ratio of biofertilizers were higher than chemical fertilizer, proved that the biofertilizers would lead to better sustainable economic development for the farmers and their country.

Currently, one of the most serious problems facing the world is environmental degradation. Multiple technological tools are required for the detection and remediation of pollutants. Environmental pollution is steadily rising and has an adverse effect on every living organism, including humans. Microorganisms and plants have biosynthetic pathways for the accumulation or breakdown of environmental contaminants from soil and water can minimise it. Because natural microbes and plants lack genetic components, they are less able to absorb or digest contaminants, and as a result, they are currently released at high levels. Plants, animals, and/or microbes are utilised as biological indicators to detect pollution in a particular ecosystem (Zaghloul et al., 2020).

Introduction

Nature provides a wealth of genetic variation in both wild and cultivated plants. In the advanced selections conducted in developing superior crop varieties cultivated today agriculture represent only a small portion of the available gene pool. However wild species remain a reservoir of valuable genetic variation and represents a valuable source for exploitation of unexplored genetic variation for improvement of various agronomic traits. Most success has come from introgression of specific single gene controlled traits largely for disease resistance (Tomleyson, 2000 and Sergio et al., 2000). The identification of genes and co-adapted gene complexes that control complex agronomic traits such as adaptation to specific environmental stresses, crop quality, yield, plant architecture, flowering time (especially important for vegetable crops) has been less effectively addressed so far and remains a major and immediate challenge. Also, existence of low genetic diversity in breeding lines of many species used in various plant breeding programs is often resulting in development of insignificant improvement of the trait under investigation (Christopher, 2000). Understanding the spectrum, frequency and distribution of allelic variation in genes controlling such multiple genes controlled complex traits will improve our knowledge of exploitation of natural variation and promotes effective management and exploitation of functional biodiversity. In India efforts have been initiated in the exploitation, conservation of crop germplasm and technologies that are needed to fully exploit this natural diversity available in our major crop plants and their wild relatives. For example, centers that maintain diverse germplasm collections (both by ICAR and State Agricultural Universities nation wild are well established.

Role of Bioinputs explains how biological inputs contribute to soil health, plant performance, ecological interactions, and long-term agricultural sustainability. It introduces the conceptual framework and classification of bioinputs before examining their effects on soil microbial populations, enzyme activities, organic carbon, nutrient availability, soil structure, rhizosphere activity, and soil-fertility indicators. The chapter further explores plant–microbe interactions and plant–faunal relationships involving earthworms, beneficial nematodes, arthropods, microarthropods, protozoa, and the soil food web. There is a range of thermal conditions within which animals are able to maintain a relatively stable body temperature by means of behavioral and physiological means. Heat stress results from the animal?s inability to dissipate sufficient heat to maintain homeothermy. High ambient temperature, relative humidity and radiant energy compromise the ability of animals to dissipate heat. As a result, there is an increase in body temperature, which in turn initiates compensatory and adaptive mechanisms to re-establish homeothermy and homeostasis. These readjustments, generally referred to as adaptations, may be favorable or unfavorable to economic interests of humans, but are essential for survival of the animal. Thus, an increase in air temperature, such as that expected in different scenarios of climate change, would affect directly animal performance by affecting animal heat balance. Potential direct and indirect impacts of climate change on livestock production have not been thoroughly explored. Changes in crop availability and quality, which have been the primary focus of previous studies, affect animal production through changes in feed supplies. Analyses of direct impacts of climate change on livestock production are few. Changes in climate would directly lead to reductions in summer season milk production and conception rates in dairy cows. Because voluntary feed intake (VFI) is the primary factor influencing the production capacity of livestock, accurate prediction of the feed consumption of livestock under heat stress is a precursor to accurate assessment of changes in production resulting from changes to a warmer climate. Quantification of potential impacts of climate change on livestock production allows producers to gain a better understanding of the magnitude of the changes in production levels faced under climate change. Projected economic losses resulting from temperature-induced reductions in production may justify mitigation of these temperature increases through changes in management practices, such as installation of shades or sprinklers in feedlots or evaporative cooling of barns. With severe economic losses predicted in livestock as a result of climate change, it?s very essential to understand the different intricacies of climate and its impact on livestock production. This will help us to prepare ourselves better for ameliorating the adverse impact of weather parameters on animal production. This will intern prevent the severe economic losses incurred in livestock industry as a result of changing climate.

There has been increasing demand of plant based raw materials for manufacturing pharmaceuticals, flavours, fragrances, cosmetics & other related products. Among these, ginsenosides, taxol, artemisinin
etc. are some of the biomolecules used in making drugs with great demand in the market. Aromatic plants are an integral component of research and development in the pharmaceutical and aroma industry.
In India, the annual growth in this sector is around 15-20 percent. There are approximately 7500 plant species of medicinal value, including aromatic plants having significant scope for phyto-pharmaceuticals and cosmetic & perfumery industry. Because raw materials are still harvested from wild growing populations in the forests, introduction of these plants in agriculture is need of the hour for further research efforts to bring them into commercial cultivation as these plants also promise large benefits to farmers, if brought under cultivation. This can be achieved by screening germplasm from natural flora to select suitable genotypes for sustainable use in the prevalent cropping system.
Plant tissue culture technically known as micro-propagation and broadly defined as a collection of methods used to grow large number of plants in vitro (in an aseptic and closely controlled environment). This technique is effective because almost all plant cells are totipotent, meaning thereby that each cell possesses the genetic information and cellular machinery to generate an entire organism. Micro-propagation, therefore, can be used to produce large number of plants, which are genetically identical to parent plants as well as to one another (Raveen et al., 1999).

Present day botanic gardens have their origins from medicinal plant gardens established during the middle of the 16^th century meant for the cultivation of medicinal plants. Therefore, the roots of botany are traced from the medicine. The modern botanic gardens are considered as an ordered collection of plants, assembled primarily for scientific and educative purposes. They serve as the living repositories and offer excellent opportunities for ex-situ conservation, taxonomy, and studies on various other botanical aspects as mentioned below:

Since many years, there has been an extensive use of synthetic pesticides against which has caused pest resistance, resurgence, residues environmental problems and toxicity to non-target organisms. Therefore, attention is given towards the alternate methods which are ecologically, economically sustainable. Botanical pesticides that control insects by using plant oils and extracts have proven to be the most effective. As they have promising role in organic farming, they help in reduction of pest load and improve crop quality and thereby increase crop yield without disturbing the environment and helps in maintaining the balance of natural ecosystems. This book chapter, discuss about the active functional ingredients of each botanical pesticide and mode of action, its importance in organic farming, their commercial formulations, major insect pests suppressed or controlled, their challenges in usage in agriculture and horticulture and its future prospects.

1. Introduction

Synthetic pesticide use has caused pest resistance, environmental problems and toxicity to non-target organisms. It is essential to follow alternate methods because these synthetic pesticides have led to acute and chronic poisoning in farm workers, applicators, and even customers. Employing botanical pesticides, is the most effective way to replace the widespread use of synthetic pesticides, is one of the important alternative strategies. Among them, plant-based bio pesticides that control insects by using plant oils and extracts have proven to be the most effective. Botanicals being natural and non-toxic to humans, animals, and the environment, have a significant role in organic farming as they help in promoting plant growth, controlling pests and diseases, and enhancing soil health. The use of botanicals is an essential component of organic farming as it helps in maintaining the balance of natural ecosystems, improves crop quality, and increases yield without the negative impacts of synthetic chemicals. As the use of synthetic pesticides and fertilizers is prohibited in organic agriculture. Organic farmers rely on natural methods to protect their crops from pests, diseases, and weeds. The beneficial insects, crop rotation, and natural remedies such as neem oil or garlic sprays are used to protect the crops. The use of natural methods to manage pests and diseases promotes biodiversity, maintains soil health, and minimizes the environmental impact of farming. Thus, plant protection is crucial in organic farming to ensure sustainable and responsible agriculture practices.

History

It was formed in response to the widespread concern in the mid-20th century that rapid increase in human populations would soon lead to widespread famine. The Rockefeller Foundation and the Mexican government, in 1943 laid the seeds for the Green Revolution when they established the Office of Special Studies, which led to establishment of the International Rice Research Institute (IRRI) in 1960 and International Maize and Wheat Improvement Centre (CIMMYT) in 1963. However, these foundations alone could not fund all the agricultural research and development efforts needed to feed the world’s population. In 1969, the Pearson Commission on International Development urged the international community to undertake “intensive international effort” to support “research specializing in food supplies and tropical agriculture”. Thus, with the support of World Bank, FAO and UNDP, CGIAR was established on May 19, 1971, to coordinate international agricultural research efforts aimed at reducing poverty and achieving food security in developing countries

The most innovative member of a social system is frequently perceived as a deviant by average members and is often assigned a status of low credibility. Consequently, this individual's role in the diffusion process, particularly in persuading others to adopt an innovation, is quite limited. Other members of the system, known as opinion leaders, play a crucial role in providing information and advice about innovations to many individuals within the system.

Opinion leadership refers to the degree to which an individual can influence others' attitudes or overt behaviors informally and with relative frequency. This type of leadership is not derived from the individual's formal position or status within the system. Instead, it is earned and maintained through the individual's technical competence, social accessibility, and adherence to the system’s norms. When a social system is oriented toward change, opinion leaders tend to be more innovative. Conversely, when the system's norms resist change, the behavior of opinion leaders also reflects this resistance. By conforming to the system’s norms, opinion leaders serve as models for the innovation behavior of their followers, thus embodying and reinforcing the system's structure.

Sheep and goats in temperate regions are seasonal breeders with breeding activity mostly restricted to short day seasons of the year (Maule 1962). Endocrine mechanisms regulated by the variations of the day length stimulate reproductive activity to have maximum conceptions during the period of shorter days and correspondingly maximum births during longer day periods after a 5 months gestation (Hafez, 1987). Thus, essence of seasonal breeding is to ensure maximum births during the period congenial for survival of young ones, including availability of feeding materials and favorable climate. In tropical regions with minimum variation of day length and less distinct seasons, feed availability is not much affected by seasons in particular. Hence most species of animals maintains reproductive activity throughout the year (Devendra and Burns 1983). However there found to have influence of various locally relevant factors affecting comfort of living such as feed availability, weather and other environmental factors. Accordingly, there occur seasonal peaks and periods of restricted reproductive activity and pattern of the same can vary according to the local situations prevailing year to year (Goel and Agarwal, 1988 and Wani et al. 1980).

According to Ministry of Information and Broadcasting (2019), presently there are 275 operational community radio stations. There are ten communi radio stations in the state of Uttarakhand. One is called Kumaon Vani which is licensed to the well known environmental non-profit group called The Energy andResourcesInstitute (TERI) based in Mukteshwar district.The otheris called Radio Khushi licensed to Guru Nanak Fifth Centenary School and based in Mussoories and third is Hello Doon licensed to National Institute of Visually Handicapped (NIVH) and based in Dehradun. The fourth is Hevalvaani in Chamba (Tehri Garhwal) whuch is licensed to NGO Aastha Jan Kalyan Evam Vikas Samiti . The fifth is Pantnagar Janvani licensed to Govind Ballabh Pant University of Agriculture and Technology (GBPUAT) and based in Pantnagar. The six is Himgiri ki Awaaz licensed to Himgiri Nabh Vishwavidyalaya (University of Sky) in Dehradun. The seventh is Radio Zindagee licenced to Graphic Era Educational Society. The eight is Radio Dehradun licenced to one NGO name Swantarta Senani Lokbandhu Ram Murti Pawsey Sewa Nyas Trust. The ninth is Hello Haldwani which is licenced to Uttarakhand Open University. The tenth is Mandakini Ki Awaz in Rudra Parayag which is licenced to NGO Mandakini Ki Awaj Sewa Samiti.

Data science supports precision agriculture by converting large and varied agricultural datasets into actionable knowledge. Information from soil sensors, weather stations, satellites, drones and smart machinery can guide field preparation, sowing, irrigation, fertilization, pest control and harvesting. This chapter examines data collection, storage, analytics, machine learning, predictive modelling and real-time IoT monitoring. It explains how these tools can optimize water, nutrients, energy and other agricultural inputs while improving productivity and sustainability. Implementation challenges include high costs, insufficient technical knowledge, privacy concerns and inadequate digital infrastructure. Emerging cloud, edge, blockchain and artificial-intelligence technologies are discussed as mechanisms for advancing climate-smart and data-driven agricultural management.

Fracture healing is a specialized type of a wound healing response in which the regeneration of bone leads to a restoration of skeletal integrity. Because healing of a fracture in a living organism is accomplished by cells, it can be modified by almost any endogenous or exogenous factors like nutrients, vitamins, hormones, growth factor etc. that has an influence on the metabolic function of bone cells. Fracture healing may be induced by malnutrition that involves certain nutrients, notably calcium (Ca), phosphorus (P) and vitamin D, but also iodine (I), copper (Cu), zinc (Zn), manganese (Mn), fluorine (F), silicon, vitamin A and perhaps vitamin C as well as different endocrines. The number of these nutrients and their interaction is so large that dietary intervention in fracture management is likely to be the most effective if directed at consumption of a good diet that is completely balanced for growth, maturity, old age or stress. Substitution of a good diet for a bad one is also likely to be more convenient and safer than most attempts at partial supplementation of a faulty diet in order to bring it into balance. Underfeeding a good diet decreases size-for-age of bones during growth and delayed fracture healing. Underfeeding may engender osteoporosis in older animals. Underfeeding of Ca, P and vitamin D, causes delayed fracture healing. Over feeding a balanced diet induces rapid growth of newly formed bone and sometimes-accelerated fracture healing but it also causes obesity in adults.

Three major component of bone are osteogenic cells, organic matrix and inorganic matrix (mineral). The osteogenic cells include osteoblasts, osteocytes and osteoclasts, while the matrix consists predominantly of collagen and proteoglycans and constitutes approximately one-third of bone mass (on dry basis). The inorganic/mineral component that makes up approximately two-third of bone and it performs two essential functions : it serves as an ion reservoir and it gives bone most of its stiffness and strength. Bone is a reservoir for 99% of body calcium, 85% of body phosphorus and 40-60% of body sodium and magnesium. The main mineral composition of a long bone is: 85% calcium phosphate as hydroxyapatite, 12% calcium carbonate and 3% magnesium phosphate, calcium fluoride and magnesium carbonate and trace amount of chloride, potassium and sodium. For collagen synthesis, hydroxylase enzymes requires ferrous ion and vitamin C. Impaired collagen synthesis also occurs during deficiencies of vitamin D and E and zinc. The organic intercellular bone matrix is rich in mucoplysaccharide. Their synthesis involves enzymes that require manganese, zinc and vitamin A.

Through the World Wide Web the users can access e-content from any point, off or in campus, through a computer and connectivity.

The digital farming solutions by various advanced tools and technologies became a prime important to see the future smart agriculture in India with enhanced productivity and farmer’s lifestyle upliftment. The agriculture industry facing challenges from farm to market by climate interfacing and energy conservations practices during farming operations. The use of innovative industry 5.0 is targeting a farming society to achieve high productivity by hardware devices like Robots, Drones, Automated Guided Vehicles (AGVs) working on the basis of Artificial Intelligence (AI), Machine Learning (ML), Deep Learning (DL), Big-Data, IoT and Cloud-based software tools and interactive software programs.

The use of tractors, combine harvesters, power tillers etc. like advanced machineries are practiced in present farming practices by youth farmers; however the digital tools with an automation of existing advanced farm machinery became an attraction to see human comfort. The custom operative design and development of digital tools are essentially becomes a need to innovate and exercise in finding best technologies for Indian farming society. The agricultural society spent several years and now also synthesizing an operational description for digital farming. There are several ways of opting solutions by using new digital logistic tools with software and hardware engagements. As we know agricultural production is influenced by climate, weather, soil properties, plant genetic profile, plant peripheral environment, plant protection, plant nourishing, harvesting and post harvesting like operational tasks. All such a challenging task can be handled by advanced digital tools and technologies.

As the seed market has become more globalized, seed trade has seen a rise in competitiveness as well as stricter quality requirements. Throughout the entire seed manufacturing process, thorough management is necessary to ensure high seed quality, from initial planning to final distribution. Among the various seed quality parameters, genetic purity is particularly critical in determining the authenticity and planting value of a seed lot. Genetic purity refers to the degree of purity within a seed lot, the genetic integrity of an F1 hybrid in a hybrid seed lot, or the difference between a submitted seed sample and the stated variety. During manufacturing, achieving complete (100%) varietal purity is challenging, even when recommended protocols are strictly followed. Outcrossing, partial off-type removal, and physical mixing during harvest, storage, or seed handling are a few examples of these factors can result in unintended varietal impurities (Bradford, 2006). Seed firms, producers, and suppliers conduct laboratory-based evaluations for internal quality control or post-control grow-out testing on seed lots to guarantee the necessary levels of purity. Assessments for genetically modified trait purity and the accidental inclusion of genetically modified (GM) seeds in non- GM seed lots are now necessary due to the introduction of transgenic varieties into the worldwide market, which has further broadened the scope of seed purity testing. Thus, seed purity testing is a cornerstone of agricultural production, ensuring that the seeds sown in the fields conform to their designated genetic identity. This process is essential for maintaining varietal integrity, meeting regulatory requirements, and ensuring high agricultural productivity (Sandra et al., 2023). The quality and genetic purity of seeds all directly impact crop productivity, pest and disease resistance, and overall farm profitability. Traditional seed purity assessment methods rely heavily on morphological, physiological, and biochemical traits. These methods include visual examination of seed characteristics, seedling grow-out tests, electrophoresis-based protein profiling, and chemical marker-based identification. However, these approaches often suffer from several limitations, such as the influence of environmental conditions on phenotypic traits, subjective assessments, and the need for significant time and labour. The accuracy and reproducibility of such conventional techniques can be further affected by variations in experimental conditions and the expertise of personnel conducting the tests.The advent of molecular biology has brought a paradigm shift in seed purity testing. DNA-based technologies provide precise, reliable, and high-throughput solutions that overcome the limitations of traditional methods. These molecular approaches allow for direct examination of genetic material, offering greater accuracy in varietal identification, hybrid seed purity assessment, and detection of genetic contamination. DNA markers can distinguish even closely related varieties, enabling seed companies, regulatory bodies, and farmers to ensure the authenticity of seed lots with high confidence. This chapter provides an overview of various DNA-based techniques employed in seed purity testing, including polymerase chain reaction (PCR)-based markers, single nucleotide polymorphism (SNP) markers, and high-throughput sequencing (HTS) technologies.

These versatile flying machines equipped with advanced sensors and cameras have the potential to transform various agricultural activities, resulting in increased productivity, reduced costs, and more sustainable practices.

INTRODUCTION OF ASSESSMENT OF SOIL MOISTURE LEVELS IN DRONES
In contemporary agriculture, effective water management is essential for optimizing crop yields while reducing resource consumption. Drones have become a transformative device for evaluating soil moisture levels and identifying irrigation requirements, providing farmers with accurate, real-time data to enhance water utilization. Equipping drones with sophisticated sensors, including thermal, multispectral, and LiDAR, enables them to assess soil conditions over extensive regions, offering insights on moisture fluctuations and pinpointing arid areas in fields. This data-driven methodology not only improves the precision of irrigation schedules but also mitigates water waste, fosters sustainability, and boosts overall crop vitality. Utilizing drones enables farmers to make informed decisions, resulting in more efficient and cost-effective irrigation methods.
Drone soil analysis utilizes drones fitted with specific sensors to gather data on the physical and chemical characteristics of soil. This data may encompass details regarding soil texture, organic matter content, nutrient concentrations, moisture levels, and pH. Various sensors are employed for distinct soil qualities. Multispectral sensors acquire data across several wavelengths of light, offering insights on plant health and soil properties. Hyperspectral sensors acquire data across numerous tiny spectral bands, yielding enhanced insights into soil composition.
Thermal sensors quantify soil temperature, serving as an indicator of soil moisture content and additional characteristics. The data is subsequently processed and analyzed to generate comprehensive maps of soil variability within a field, offering farmers critical insights to inform their management decisions.

Electronic resources for libraries includes online databases , electronic( e-) journals , electronic(e-) books ,full text articles and web sites, where online journals have firmly established themselves as essential resources for libraries and information centers  and their users, as appointed books in most of disciplines. Electronic books (e-books) have not found the same favour. The potential of e-books to support learning activity has been acknowledged, and new services have emerged in recent years, but uptake has been slow.

Global warming needs a shift to automobile solutions that reduces/ do not produce greenhouse gas emissions. Automobile related pollution is the major source for reduction in air quality in Indian cities. India need to reduce dependency on a fossil- fuel and reduced transportation related emissions. People living in some of the Indian cities are being affected by noise pollution and electric vehicles may contribute to a reduction in noise pollution levels in the cities. Energy efficiency and emissions are two important contributing factors in transportation across the globe.

Abstract

The growth story of any economy depends upon availability of financial services; finance is the life blood of economy and financial system work like the heart of the economy to ensure availability of finance. Efficient mobilization of household saving and effective allocation to the growing credit requirement of the economy helps in sustainable development of the country. Given the interdependence of all ecosystem units and humans, education for supportable sustainable development (ESD) is a crucial educational tool. The Brundtland Report of 1987 also highlights a crucial element when it states that “everyone must have access to the basic necessities of life and the opportunity to realize their dreams of a better life for sustainable development.” In order to alter the prevailing beliefs and attitudes which people have about themselves, society, and the environment, ESD — which is mapped out on the three pillars of the economy, society, and environment—plays a crucial role. The core tenets of ESD are those that support sustainability, including social tolerance, gender equity, intergenerational equity, poverty reduction, and environmental preservation and renovation.

The Rio Declaration, which outlines 27 sustainability principles, makes this claim. As they support the development which is related to education and reorient current education to promote sustainability, these principles can assist governments, society, and educational institutions in routinely classifying information, principles, skills, and values. Globally, education which is related to sustainable development, or ESD, is widely regarded for its substantial contribution to improving livelihoods and advancing society’s transition to sustainability. This review discusses the natural antimicrobial and anti- oxidants sources viz., various essential oils, their composition and application in different meat and meat products. Essential oils from basil, rosemary, thyme, oregano, ginger, basilica, balm, coriander, rosemary and clove have exhibited a better potential to be used as an antimicrobial agent in meat and meat products. They owe their anti-microbial properties to the phenolic compounds present in them. They dislocate cell membrane and disrupt functionality of bacterial cell membrane and eventually leading to the release of intracellular components. However, essential oils are not widely used due to the pungent and intense aroma imparted to the food, thus there is still need to work out on the novel technologies which can not only increase food shelf life but at the same time, are sensorially acceptable to the consumers.

India was a self-sufficient nation in its food production before independence but after the occurrence of various famines, the government in late 1960s started focusing more on the crop production i.e.,green revolution (NAAS 2019). But with time, the negative externalities caused by green revolution were vividly noticeable. The indiscriminate use of chemicals has debilitated the environment by causing soil depletion, pollution, deforestation, climate change etc. thus affecting the health of human kind. In the mid-1990s, natural farming viz., Zero Budget Natural Farming (ZBNF) was demonstrated by Sh. Subhash Palekar also known Subash Palekar Natural Farming (SPNF). It is an agroecology based diversified farming system which involves no financial outlay to purchase essential from outside and makes farming profitable. Farm advisories have played a key role in transforming India’s agriculture, helping the country shift from a food deficit to a surplus nation. The Indian public agricultural extension system has been instrumental in this transformation through Green Revolution in the 1960s, but by the end of the 1970s, its role had started to decline. Critics argued that the system had become a monolithic organization without clear objectives (Babu et al., 2013). According to NSSO data, in 2004, public extension services in India, including the Krishi Vigyan Kendra, extension workers, field demonstrations and study tours, reached to less than ten percent of farmers. Instead, farmers relied mostly on other progressive farmers (17%) and input dealers (13%) for information, while mass media including radio, television and newspaper played a significant role reaching to more than thirty percent farmers (Mkhize and Zhou, 2012; Meena et al., 2022a). One of the major constraints in agricultural extension services (AES) in the country is the shortage of extension staff. According to a report, in 2012-13, a single extension functionary served 1,162 operationalholdings, whereas the recommended ratio was 1:400 in hilly areas, 1:750 in irrigated areas, and 1:1000 in rain-fed areas. However, until now, agricultural intensification generally had a negative effect on the quality of many of the essential resources such as soil, water, land, biodiversity and the ecosystem services which caused a decline in the yield and factor productivity growth rates. Another challenge to agriculture is its environmental food print and climate change. Agriculture is responsible for about 30% of the total greenhouse gas emissions, while being directly affected by the consequences of a changing climate. It is estimated that global conversion of all croplands to conservation tillage (CT) could sequester 5 billion tones of carbon annually.

The food industry is so diverse and exploring new and possibilities to catch diverse consumer worldwide, a proper understanding of effect of fermentation on mentioned properties will be key to hold competitive market. Hence, the present chapter will cover the basics of rheology and its role in food industry, effect of fermentation on rheological and sensory attributes of major class of food.

Abstract

Dietary fibers mostly include non-starch polysaccharides such as celluloses, hemicelluloses, gums and pectins, lignin, resistant dextrins and resistant starches. Based on their water solubility, dietary fibers may be divided into two forms insoluble dietary fiber which includes celluloses, some hemicelluloses and lignins which is fermented to a limited extent in the colon and soluble dietary fiber which includes f-glucans, pectins, gums, mucilages and hemicelluloses that are fermented in the colon. Resistant starch generally considered to be represented by the total amount ofstarch and the product of starch degradation that are not digested in the small intestine andpass into large intestine, and regarded as a component ofdietary fiber. Herbal nutraceutical is used as a powerful instrument in maintaining health and to act against nutritionally induced acute and chronic diseases, thereby promoting optimal health, and quality of life. Dietary spices in their minute quantities has an immense influence on the human health by their antioxidative, chemopreventive, antimutagenic, anti-inflammatory, immune modulatory effects on cells and a wide range of beneficial effects on human health. Nutraceutical is the hybrid of ‘nutrition’ and ‘pharmaceutical’. Nutraceuticals, in broad, are food or part of food playing a significant role in modifying and maintaining normal physiological function that maintains healthy human beings. Functional foods are including whole foods and fortified, enriched, or enhanced foods or dietary components that may reduce the risk of chronic disease and provide a health and physiological benefit beyond the traditional nutrients it contains.

The financial system in India has grown rapidly in the last three decades and more. The functional and geographical coverage of the system is truly impressive. Nevertheless, data do show that there is exclusion and that poorer sections of the society have not been able to access adequately financial services from the organized financial system. There is an imperative need to modify the credit and financial services delivery system to achieve greater inclusion. The implementation of the recommendations made in this Report could go a long way to modify particularly the credit delivery system of the banks and other related institutions to meet the credit requirements of marginal and submarginal farmers in the rural areas in a fuller measure. However, creating an appropriate credit delivery system is only a necessary condition. This needs to be supplemented by efforts to improve the productivity of small and marginal farmers and other entrepreneurs so that the credit made available can be productively employed. While banks and other financial institutions can also take some efforts on their own to improve the absorptive capacity of the clients, it is equally important for Government at various levels to initiate actions to enhance the earnings capacity of the poorer sections of the society. The two together can bring about the desired change of greater inclusion quickly.

India is basically agriculture, which is the main source of livelihood for 70% of people. Livestock enterprise is not the exception. The primary sectors included the agricultural labourers, labours (workers) etc. The agriculture contributes about 40% of National income. And two problems in Agriculture are lack of Technology and Institutional arrangements. The investment is not possible an account of poor yielding resulting in pitiable economic conditions and. The establishment of NADARD with it objective in promoting health and strength of credits institutions forming front of the delivery system, i.e. COoperatives, Commercial Banks, RRBS is the Landmark in Agricultural Finance.

Abstract
India is second among all nations in total entrepreneurship activity as per the Global Entrepreneurship Monitor Report 2012. The liberalization of the economy since 1991 has paved the way for a huge number of people to become   entrepreneurs. Developing countries like India are striving to be outward looking global economies rather than inward looking local economies. This will be possible only if small and medium scale enterprises (SMEs) are encouraged. The 2015 Global Entrepreneurship Monitor (GEM) represents the 17th annual global survey of entrepreneurial activity across multiple phases of the business process; the characteristics, motivations and ambitions of entrepreneurs; the attitudes societies have toward this activity; and the quality of entrepreneurship ecosystems in different economies. Sixty-two economies participated in the 2015 survey.
Entrepreneurship plays an eminent function in creating an avenue for employability for rural communities, providing self-employment for those who have started-up a business of their own and enhancing the economic status of the rural sector as well.  Entrepreneurship has transformed many entrepreneurs into successful business persons and generated income for rural communities.

SYNOPSIS

Fish has now become an important animal protein for mankind. It is a rich source of essential amino acids, vitamins and minerals. Fish meat is easily digestible compared to other animal meat and has a higher Protein Efficiency Ratio when compared to casein, the milk protein. Fish oils like body oils of fishes like sardine, mackeral, anchoviella, herring, salmon etc. are the richest source for Omega-3 long chain poly unsaturate fatty acid like Eicos- pentanoic acid (EPA) and Docosahexaenoic acid (DHA) having therapeutical applications for man. A number of fishery products and by-products like squalene, chitin, chitosan, oyster meat, mussel meat, shark bones etc.

Introduction

The diversifi cation and modernization of the present agricultural and other related activities supported by efficient on and off farm processing of the commodities for the purpose of value-addition is expected to increase food production and create employment and income generation. Adding value to food commodities after harvest is also aimed at minimizing the losses during storage and to maintain the quality of product. Efficient post-production practices, particularly the preservation and processing of agricultural and allied produces may bring a wide range of benefits to the people in this country, generating job opportunities by opening up village-level processing units. The goals of post-harvest and food processing technology are loss prevention as well as adding value to the harvested biomass, which result in more income to the farmers/processors and better quality produce provided to the consumers. Post-harvest and food processing technology are commodity-and location-specific and it is done at home, village and/or cottage levels at small and large industrial scale. On-farm post-harvest storage and primary processing integrated with production technology help to generate more employment opportunities and additional income for rural people. Minimization of the post-harvest losses is an important means to increase per capita food availability. It also helps to generate more employment and income. Investment in post-harvest measures is more economical and time saving than in productivity to obtain the same amount of a particular commodity. Furthermore, post-harvest measures automatically add value to the raw commodities as they pass on their marketing channels. Adoption of postharvest technologies and value additive measures are very strong tools for rural and social development through employment and income generation. Development and adoption of efficient value addition practices will enhance national food supply and sustain food security even at the household level. Fruits and vegetables processing industries have a good deal of potential in serving the rural economy. First, it helps in generating more employment for rural people. It will also check mobility of rural masses towards urban areas in search of employment. Employment opportunities offered by agroprocessing industries are plenty to the farm population and entrepreneur seeking self-employment. Cottage scale units particularly offer self-employment opportunities. Traditionally women handle food and are familiar with skills of food processing. In order to improve the status of living of woman and rural food processing, low cost appropriate fruit and vegetable processing technologies offer excellent opportunities for production of processed foods. The improvement of status of socially backward and landless labor classes will be possible only through providing non-farm employment at their doorsteps. This will generate a sense of security and confidence amongst rural people for overcoming uncertainty in agricultural income and providing self-employment to the land-less labor. The locally available untapped resources should be used effectively.
