Introduction
From the tiniest insects to the largest blue whales, all species in the animal kingdom have been shown to undergo the migration. Millions of animals embark on epic journeys every year in search of food, shelter, and opportunity for mating. These animals routinely travel thousands of kilometres by land, sea, or air, which both tests and improves their endurance. Among the most striking animal migrations are those of Arctic terns. The long-distance migration of these little birds from pole to pole is well-known. They are thought to move over 40,000 kilometres (25,000 miles) a year, spending the majority of their time at sea chasing an endless summer. One of the most well-known migrations is that of the monarch butterfly, which travels across several generations. Though they are widespread throughout the United States and beyond, monarch butterflies are most known for their ability to travel 4,800 kilometres (3,000 miles) from Canada to Mexico. Millions of monarch butterflies fly south each year from their northern ranges to the oyamel fir forests near the Sierra Madre mountains, where they build massive roosts to remain warm throughout the winter. The monarchs begin their annual migration northwards in the spring, taking three to five generations to reach their goal. The migration that is the most dramatic belongs to the wildebeest. They coexist with thousands of zebras and gazelles in enormous herds that number over a million. The yearly migration of wildebeest across Tanzania and Kenya in quest of new water and grazing land is well-known. One of the most magnificent displays of nature is thought to be the migration. Animals that migrate are essential to preserving ecosystem balance and sustaining life as we know it. They distribute seeds and serve as pollinators, which support the structure and functionality of ecosystems.

Understanding the key terms in plant pathology is crucial for grasping the basic concepts and principles of how diseases develop and how they can be managed. This chapter will define and explain the terminology commonly used in plant pathology to facilitate a clearer understanding of the subject.
• Adjuvants: Additives mixed with fungicides to enhance their performance. These are usually inactive substances, such as surfactants, that improve how the chemical spreads, sticks, or penetrates plant surfaces by altering surface tension.
• Antagonism: A relationship where one microorganism harms or inhibits the growth of another, often through competition or by producing harmful substances.
• Antagonists: Organisms that can suppress or interfere with the growth of other microorganisms, often used in biological control to reduce plant diseases.
• Antibiosis: A form of microbial warfare where one organism produces a chemical that negatively affects another organism’s growth or survival.
• Appressorium: A swollen structure at the tip of a fungal germ tube or hypha that helps the fungus stick to and break into the plant’s surface.

Definition and Significance of Plant Diseases
Definition
A plant disease is a harmful deviation from normal functioning caused by a persistent or semi-persistent agent leading to physiological disruptions, structural abnormalities, or economic loss in plants. It manifests through the interaction between the host (plant), pathogen (disease-causing agent), and environment, which together form the disease triangle.
According to George N. Agrios (2005), a plant disease can be defined as:
“Any harmful deviation from the normal functioning of physiological processes of plants, induced by continuous irritation of a primary causal agent, leading to symptoms.”
Revised Significance of Plant Diseases
1. Economic Importance: Plant diseases lead to large-scale losses in crop production, estimated to account for approximately 10–15% of global crop yields annually (Agrios, 2005). This translates to billions of dollars in losses each year.
2. Impact on Food Security: The destruction of staple food crops like rice, wheat, and maize by diseases threatens food security, particularly in developing countries.
3. Environmental Effects: Plant diseases contribute to ecosystem imbalances by disrupting natural plant populations and affecting biodiversity.

Objectives of Plant Pathology
The key objectives of plant pathology include:
1. Understanding Disease Etiology: Identifying the causal organisms or factors responsible for plant diseases.
2. Disease Diagnosis: Developing tools and techniques for early diagnosis of plant diseases.
3. Pathogenesis: Studying how pathogens cause disease in plants and how plants respond to infection.
4. Disease Management: Creating effective and sustainable strategies to control and prevent plant diseases.
Definition and Scope of Plant Pathology
Plant pathology, also known as phytopathology, is the study of plant diseases caused by pathogens (infectious agents) and environmental conditions (non-infectious agents). It encompasses the diagnosis of plant diseases, the mechanisms of disease development, and the development of management strategies. A widely accepted definition of plant pathology is provided by George N. Agrios (2005), who defined it as:
“Plant pathology is the study of the living entities and environmental conditions that cause diseases in plants, the mechanisms by which they induce disease in plants, the interactions between the plant and the pathogen, and the methods of preventing or managing plant diseases.”
Plant pathology integrates principles from microbiology, botany, mycology, bacteriology, virology, and genetics to address plant health issues. It is a critical field for ensuring food security, agricultural sustainability, and the stability of ecosystems

Innate and adaptive behaviors are fundamental aspects of the behavioral repertoire exhibited by organisms across the biological spectrum. This abstract provides an overview of the key characteristics, mechanisms, and evolutionary significance of these two distinct forms of behavior.Innate behavior refers to genetically programmed actions or responses that are typically present from birth or shortly after. These behaviors are often instinctual
and do not require prior learning or experience. They are crucial for the survival and reproduction of an organism, encompassing actions such as feeding, mating, and predator avoidance. Innate behaviors are deeply rooted in an organism’s biology and are thought to have evolved as a result of natural selection to optimize an individual’s chances of survival and reproductive success. On the other hand, adaptive behavior encompasses actions that are learned or modified through experience and environmental interactions. Adaptive behaviors are highly flexible and can vary among individuals of the same species. These behaviors allow organisms to adjust to changing environmental conditions, exploit new resources, and navigate social interactions. Learning and memory play a central role in the development of adaptive behaviors, enabling organisms to refine their responses over time.This abstract also highlights the interplay between innate and adaptive behavior in many organisms. While innate behaviors provide a foundational framework for survival, adaptive behaviors allow individuals to fine-tune their responses and maximize their fitness in dynamic environments. Introduction
A significant aspect of an animal’s existence is their adaptability to changing circumstances and their willingness to adapt their behaviour. An animal becomes more intelligent the more it learns. Associative and non-associative learning are the two main categories into which learning can be divided. Whereas associative learning involves classical conditioning, non-associative learning involves sensitization and habituation. When a stimulus
occurs frequently, an individual develops a gradual familiarity with it. This is known as habituation. Sensitization, on the other hand, is the increased response to the same stimulus that may or may not be related to other variables. In order to get the desired response, training is required for the behavioural responses to two independent stimuli that are kept associated during the conditioning process. In general, non-associative learning stems from an animal’s perception of its environment or circumstances, whereas conditioning is based on training-based learning.

Introduction
An animal will engage in a series of display activities known as courtships to try to entice a mate and show that it wants to copulate. These actions frequently take the form of vocalisations, mechanical sound production, ritualised movement (referred to as “dances”), or exhibitions of physical prowess, agonistic aptitude, or beauty. A social activity known as courtship occurs when male and female members of the same species engage in order
to facilitate mating and reproduction. Because so many sperm are created and must find and fertilise a small number of eggs, sperm rivalry led to the evolution of courtship. Males must compete with one another for the female’s sperm in order to fertilise her eggs, which are a finite supply. Male-to-male competition and female choice are the results of sexual selection between men and females, which is a translation of gametic selection. An offshoot
of this male-male competition is the courtship display, where men have developed a variety of tools and strategies to entice females to procreate.

Introduction
In a host-parasite relationship, the interaction between the two organisms is highly specialized. Each partner impacts the other’s life by influencing their metabolism and behavior through various adaptive mechanisms, all aimed at ensuring their own survival. While the parasite exerts every effort to fully establish itself within the host—by consuming its resources, damaging its tissues, secreting toxins, and evading the host’s immune
system through molecular mimicry—the host, in turn, strives to eliminate the parasite by mobilizing its immune defenses.
Despite their ongoing conflict, neither the host nor the parasite is able to completely eradicate the other. The host seeks to fend off the harmful, invasive parasite, while the parasite aims to establish a lasting, close relationship with the host. However, this dynamic can lead to a point where either the host or the parasite, often the parasite, becomes dominant or independent, resulting in the death of one party. Thus, the host-parasite relationship appears to be a perpetual and interdependent one, each partner intricately tied to the other. When a parasite enters a host, the host must make adjustments, and the parasite must adapt
to the host’s environment. This interaction leads to the development of a relationship in which both the host and the parasite influence each other’s growth, metabolism, and overall well-being. Generally, the host-parasite relationship unfolds through a series of stages: it starts with the transmission of the parasite from one host to another, followed by the parasite’s distribution and localization within or on the new host. This is followed by the
parasite’s growth or multiplication. Throughout this process, both the host and the parasite engage in resistance efforts against each other. The process involves several stages: the parasite’s method of attack, the changes the parasite induces in the host, and the alterations the parasite undergoes due to its presence in the host. It also includes the adjustments made by both host and parasite during the infection, the escape of the parasite’s infective stages from the host, and ultimately, the host’s recovery or death

The behaviour of animals during restraining, handling, and feeding is a crucial aspect of animal husbandry and veterinary care. Understanding and interpreting their behaviour in these contexts is essential for ensuring the well-being of animals and the safety of humans involved in their care.
I. Animal Behaviour During Restraining
1. Fear and Anxiety: When animals are restrained, they often exhibit fear and anxiety. This behaviour can manifest as vocalizations, attempts to escape, increased heart rate, and sometimes aggressive actions. Understanding the signs of fear and anxiety in animals is essential to mitigate stress during restraint. Calm and gentle handling can help reduce the negative impact on the animal’s well-being.
2. Fight or Flight Response Animals: When restrained, may respond with a “fight or flight” reaction. They may try to flee or become defensive, potentially causing harm to themselves or the handlers. It is essential to anticipate this response and use appropriate restraints, such as halters or cages, to ensure safety for both animals and handlers.
II. Animal Behaviour During Handling
1. Trust and Bonding: The behaviour of animals during handling can vary depending on their previous experiences and the quality of their relationship with their caregivers. Animals that trust their handlers and have positive associations with handling are more likely to exhibit calm and cooperative behaviour. Trust is built through consistent, gentle, and respectful handling over time.
2. Aggression and Fear: Animals that have had negative handling experiences may exhibit aggression, avoidance, or fear during handling. This can pose risks to both the animals and the handlers. In such cases, it is essential to employ behaviour modification techniques and gradually desensitize the animals to handling procedures.

This chapter outlines fundamental molecular biology protocols essential for genomic analysis and molecular characterisation. Modern molecular biology relies heavily on precise analytical techniques for studying genetic material. Hence, this section presents a typical workflow encompassing nucleic acid extraction, amplification, and subsequent analysis. These methodologies are fundamental to various applications in molecular biology, including phylogenetic analysis, gene expression studies, and molecular diagnostics.
The chapter covers four core molecular biology and bioinformatics techniques, each building upon the previous:
1. Genomic DNA Extraction: Protocols for efficient isolation of DNA from biological samples. This encompasses cell lysis, protein denaturation, and nucleic acid purification through standard separation techniques. The quality and purity of extracted DNA significantly influences downstream applications.
2. Primer Design with Primer3: In silico design of oligonucleotide primers for PCR amplification. This section covers primer design parameters including optimal melting temperature (Tm), GC content, primer length, and considerations for avoiding secondary structures and primer-dimer formation.

Introduction to Animal behavior
The tale of modern humans is a captivating narrative that begins around 200,000 years ago, marked by the practices of gathering and hunting wild animals. The advent of domestication heralded a new era, paving the way for diverse human societies, cultures, and traditions in what is known as the Neolithic transition. Domestication, an evolutionary process driven by genetic changes through artificial selection for human-beneficial traits
and natural selection in captivity over numerous generations, reshaped the relationship between humans and animals. This intricate dance of evolution, genetics, and human ingenuity gave rise to an array of species adapted to human care and companionship. Fitness, in this context, refers to an animal’s ability to thrive in close quarters with humans, conspecifics, and other animals, consume readily available food, breed successfully in captivity, and elicit human care in an anthropogenic setting. This adaptation process led to phenotypes characterized by reduced “fight or flight” responses, increased social tolerance, and less selectivity, enabling efficient use of available resources. Traits such as early sexual maturity, less seasonality in breeding, and, occasionally, pedomorphism—the retention of juvenile, playful behavior into adulthood—further illustrate the transformative effects of domestication.For terrestrial animals, three primary domestication routes have been identified: the commensal pathway, the prey pathway, and the direct route. In the commensal pathway, animals played a significant role in their domestication. Attracted by human waste, they initially settled in artificial environments, eventually forming mutually beneficial relationships with humans. Species such as the chicken (Gallus domesticus), cat (Felis catus), and dog (Canis familiaris) followed this pathway.

This chapter explores the essential techniques used in veterinary parasitology to collect, identify, and diagnose parasitic infections. These methods are crucial for understanding general animal health, the complex relationships between parasites and their hosts and for tracking disease outbreaks, that will ultimately allow the development of effective control strategies. Whether in a research lab or a clinical setting, the techniques discussed here are widely used to detect and study parasites that impact both domestic and wild animals.
2.1 Collection of Specimens for Parasitological Examinations
Different species of parasites affects almost all parts of the host. These organisms can inhabit virtually every organ system of the host animal, from the brain and lungs to the digestive tract and skin. Therefore, a thorough examination of both living animals and post-mortem cases is essential for collecting parasites and determining cause of death (when applicable). When collecting from live animals, samples should be collected after through exanimation of the animals and following the standard procedure. The collection of correct samples, use of appropriate transport media and proper handling of specimens are crucial factors that directly influence diagnostic accuracy.
The type of specimen collected depends on the methods of identification and diagnosis. For example, diagnosis of blood parasites requires specific types of samples: peripheral blood smears for microscopic examination of hemoprotozoans, serum or plasma for ELISA and other serological tests, and unclotted whole blood for molecular diagnostic methods such as PCR and qPCR.

This chapter introduces the essential components of laboratory work that form the foundation for veterinary parasitology and molecular biology research. A well-equipped laboratory along with proper safety protocols and correctly prepared reagents, is the key to reliable experimental outcomes and a secure working environment.
The following sections describe the standard operating procedures and laboratory biosafety, standard equipment used in research work, and the fundamental principles of solution preparation. These basic laboratory skills are essential prerequisites for the specialised techniques covered in subsequent chapters on veterinary parasitology, molecular biology and bioinformatics. Understanding and applying these foundational concepts allows researchers to maintain experimental consistency, ensure reproducible results, and conduct investigations safely and efficiently. The methods and principles outlined here will be regularly applied throughout the various techniques detailed in this manual, serving as essential knowledge for all laboratory personnel as well short-term visitors.
1.1 Laboratory Standard Operating Procedures and Safety
Laboratory safety is fundamental to protecting personnel, maintaining sample integrity, and ensuring reliable experimental outcomes. This section outlines essential laboratory conduct, safety protocols for personnel and equipment, waste management, and emergency protocols for standard laboratories carrying out diagnostics as well as research.

In the preceding chapters, we embarked on a comprehensive journey through the realm of vegetables, covering a wide range of species that belong to different botanical and culinary groups. These chapters provided an indepth exploration of the characteristics, growth habits, and environmental requirements of various vegetables, as well as the effects of weather conditions on their productivity.
However, the diversity of vegetables is vast, and there are several other important species that were not covered in the earlier chapters. These vegetables may be regionally specific, possess unique characteristics, or have distinct environmental requirements. Despite their importance, they have remained outside the scope of our previous discussions.
This chapter aims to fill this knowledge gap by providing an overview of these additional vegetables, with a focus on understanding the impact of weather conditions on their growth, development, and productivity. By examining the effects of temperature, moisture, light, and other environmental factors on these vegetables, we can gain valuable insights into their cultivation requirements and optimize their production.
Through this chapter, we hope to provide a more comprehensive understanding of the vegetable kingdom, highlighting the diversity of species, their environmental requirements, and the strategies for maximizing their yields. By expanding our knowledge of these lesser-covered vegetables, we can promote their cultivation, conservation, and sustainable use, ultimately contributing to global food security and nutrition.

Mushrooms are a nutritious and versatile food commodity that has gained significant importance in India in recent years. With a growing demand for healthy and organic food options, mushroom production has emerged as a lucrative venture for Indian farmers (Fig. 9.1).
• India is home to a diverse range of wild and cultivated mushroom species, with over 200 varieties found across the country. The majority of mushroom production in India is concentrated in the states of Uttar Pradesh, Punjab, Haryana, and Himachal Pradesh.
• Mushroom production in India has witnessed significant growth over the past few decades, driven by advances in technology, improved farming practices, and increasing demand. According to the Indian Council of Agricultural Research, the country produces over 1.5 million metric tons of mushrooms annually, with a value of over `3,000 crores.
 • Mushrooms are an important crop in India due to their high nutritional value, medicinal properties, and economic significance. They are an excellent source of protein, fiber, and various essential vitamins and minerals. Mushrooms are also rich in antioxidants and have been found to have potential health benefits, including reducing inflammation, improving cardiovascular health, and boosting the immune system.

The Government of India, during 1980s, recognized the necessity to improve the latex yield productivity in the traditional rubber growing regions and also expand these plantations to non-traditional regions to meet the ever increasing demands of natural rubber in India (Sethuraj et al., 1989). Agrometeorological studies were initiated during early 1986 with the appointment of a Scientist (Agrometeorology). To begin with, scientific issues were identified as: (a) delineate the potential non-traditional regions for expansion of rubberplantations, (b) estimate the impact of climatic conditions, especially abiotic  stress conditions on productivity, (c) quantify influence of meteorological factors on the physiological responses towards plant growth and yield attributes, (d) estimate the irrigation requirements to mitigate the drought conditions, and (e) develop weather based predictive models for `Abnormal leaf fall’ disease of rubber plantations. An attempt is made to present synthesis of accomplishments during 1986 to 1992 period of my association with the Rubber Research Institute of India (RRII), Kottayam.

The global economy has adversely been affected to a considerable extent due to weather related disasters like droughts, floods, heat waves and cold waves which are not uncommon in the recent past due to global warming and climate change. For the first time, the year 1998 was declared as the weather related disastrous year globally. The year 2015 was the warmest year globally, again. Such weather phenomenon of warming more and more year after year was noticed in the current decade as well when we look at 2023 and 2024. The year 2010 was the warmest year ever recorded, followed by 2009 in India. The occurrence of floods and droughts, cold and heat waves adversely affected the Indian foodgrains production to a large extent across the Country in one or other region as seen in 2014, 2012, 2009, 2004, 2002 and 1987. The cold wave in winter 2003- 04 across the Northeast region of the Country and the heat wave in summer 2004 across the same region are still in memory to understand the ill effects in agriculture/horticulture/poultry/inland fisheries sectors. Model simulations
indicate that a marked increase in rainfall and temperature over India would be seen during the current century. The maximum expected increase in rainfall is likely to be 10–30% over the Central India. Temperatures are likely to increase between 2 and 30Cby the end of 2100 A.D. However, steps taken towards the green energy across the world may yield results not to allow atmospheric global temperature beyond 1.5 to 20C. Greater number of high surges and increased occurrence of cyclones in post monsoon period along with increased maximum wind speed are also expected along the East Coast of the Country. The summer droughts and heavy rains leading to waterlogging, floods and landslides during the monsoon period is a threat to plantation crops which are predominantly grown in the Humid Tropics like Kerala (8°15` N and 12°50`N latitudes and between 74°50`E and 77°30`E longitudes).

Brassica is a genus of plants belonging to the mustard family (Brassicaceae) and includes some of the most widely cultivated and consumed vegetables globally. The Brassica group encompasses a diverse range of cool-season crops, including broccoli, cauliflower, cabbage, kale, and mustard, among others (Fig. 8.1). These vegetables are not only rich in nutrients, fiber, and antioxidants but also play a vital role in human health, food security, and sustainable agriculture.
• India is one of the largest producers of Brassica vegetables, with a  significant portion of the crop being cultivated in the Indo-Gangetic plains. According to the Indian Horticultural Database, Brassica vegetables are grown on approximately 2.5 million hectares of land, with a total production of over 30 million metric tons annually. The major Brassica-producing states in India include Maharashtra, Madhya Pradesh, Gujarat, Uttar Pradesh, and West Bengal.
• The importance of Brassica vegetables extends beyond their nutritional value and economic significance. They are also an integral part of Indian cuisine and culture, with various regional and traditional recipes featuring these vegetables as main ingredients. Furthermore, Brassica crops are a vital component of crop rotation and intercropping systems, helping to maintain soil health, reduce pests and diseases, and promote biodiversity.

Coffee is grown at higher elevation across the Western Ghats between 750 and 1200 m amsl. It requires a certain degree of shade for its better performance.  The annual rainfall over the coffee growing tracts varies between 1400 and 2600mm, having uni/bi-model rainfall with prolonged dryspell from November to May. It is more so over North of the Western Ghats. The mean annual maximum temperature varies between 24 and 300C while the minimum between 15 and 180C. The difference between maximum and minimum temperatures (temperature range) varies between 5 and 160C across the coffee tract. The ‘Monsooned Malabar Coffee’ is a specialty coffee produced from the erstwhile ‘Malabar Region’. It undergoes certain changes in physical and biochemical characters when the coffee beans are processed during the summer monsoon (June to September). It is processed at Mangalore, located in Coastal Karnataka. The processing location experiences heavy rainfall of more than 1000 mm in July, followed by 950 mm in June and 600 mm in August. Out of 3264 mm of annual rainfall, 2852 mm is received during the monsoon period. It accounts more than 80 per cent of annual rainfall. The maximum temperature during the coffee monsooning period varies between 28 and 30°C while night temperature revolves between 22 and 24°C. Being located in the tropics along the West Coast, the crop processing environment in terms of surface air temperature is relatively uniform and moderate with a characteristic feature of heavy clouds and continuous rainfall during the monsoon period. These monsoon features are more predominant from the middle of June to August during which the coffee beans are subjected to monsooning. The coffee beans
bulge in the process of monsooning and the volume increases significantly due to absorption of atmospheric moisture. It is directly related to the monsoonal wind during which coffee beans are processed. The bulging was less in all the samples processed during monsoon 2003, which varied from 2.1 to 2.7 ml/100 number, while it ranged between 2.7 and 5.8 ml/100 number in the samples processed during monsoon 2004.

Allium vegetables, which include onions, garlic, and shallots, are a fundamental part of Indian cuisine and play a vital role in the country’s agricultural sector (Fig. 7.1). Here’s an overview of their importance, area, and production in India:
• India is the second-largest producer of onions in the world, accounting for over 20% of global production. Onions are grown across various states, with Maharashtra, Madhya Pradesh, and Karnataka being the top producers. The country produces over 19 million tons of onions annually, with a significant portion being consumed domestically.
• Garlic is another essential Allium crop in India, with the country producing around 1.4 million tons annually. The major garlic-producing states in India are Madhya Pradesh, Gujarat, and Maharashtra.
• Shallots are also grown in India, particularly in the states of Maharashtra, Gujarat, and Tamil Nadu. The country produces around 0.7 million tons of shallots annually.
• The importance of Allium vegetables in India extends beyond their culinary uses. They are a significant source of income for millions of farmers across the country. The Allium crop industry also provides employment opportunities in rural areas, contributing to the country’s economic growth.

The natural habitat of rubber (Heavea brasiliensis) is rain forests of the Amazon basin, situated within 5° North and South at altitudes below 200m. The climate of this region is equatorial monsoon type characterized by mean
monthly temperature by 25 to 28°C, well distributed rainfall and no marked dry weather. Though it is originated in the Amazon basin, it is now predominantly grown in the tropics where an equatorial monsoon type climate prevails. Regions between 8°N and 10°S which includes Indonesian archipelago, Malaysia, southern part of Sri Lank  and some other Islands, are better suited to rubber cultivation. The production of natural rubber in the country was 8.65 lakh MT in 2008–09, registering a 4.74 per cent growth compared to the previous year. India is the fourth largest producer of natural rubber with a share of eight per cent in the World after Thailand, Indonesia and Malaysia and the fourth largest consumer of natural rubber after China, USA and Japan. Among the rubber growing countries in the World, India occupies a pride place with the top most position in productivity (Table 9.1). The productivity of natural rubber (NR) in India in 2009–10 was 1784 kg/ha. In 1950–51, it was 284 kg/ha. The growth achieved in terms of the productivity of natural rubber is 628 per cent. This achievement

Leafy greens, comprising a diverse array of crops such as spinach, lettuce, kale, collard greens, and mustard greens, among others, are a vital component of global vegetable production. With their high nutritional value, versatility in culinary uses, and ease of cultivation, leafy greens (Fig. 6.1) have become an integral part of diets worldwide.
• In India, leafy greens are grown across various agroclimatic zones, with major producing states including Maharashtra, Gujarat, Uttar Pradesh, and Tamil Nadu. The estimated area under leafy greens cultivation in India ranges from 0.7 to 0.8 million hectares, accounting for a significant share of the country’s total vegetable production. The annual production of leafy greens in India stands at approximately 5-6 million tonnes, with a considerable portion being consumed domestically.
• Beyond their culinary and nutritional significance, leafy greens also hold substantial economic importance, particularly for small and marginal farmers who constitute the backbone of India’s agricultural sector. The cultivation of leafy greens provides these farmers with a vital source of income, enabling them to support their livelihoods and contribute to local economic development.
 

Tea (Camellia sinensis) is one of the most important beverage crops in the World and the second most commonly drank liquid on earth after water. It has numerous medicinal benefits mainly due to its antibacterial and
antioxidant properties. The major tea growing regions of the world are South-East Asia (India and Sri Lanka), Eastern and South Africa consisting of Kenya, Malawi, Tanzania, Uganda and Mozambique. All these countries are producers of black tea. China and Japan are the major producers of green tea. These countries experience cool, tropical humid climate where this crop is being cultivated. However, at present, the crop is also being cultivated in wide range of climates from Mediterranean to warm, humid tropics to include countries such as Russia and Georgia in the northern latitudes and Argentina and Australia in the southern latitudes (Plate 8. 1). The region to which the crop is grown is closely linked with the climate. The crop is grown across wide altitudes up to 2200 m a.m.s.l. Sri Lanka, Kenya, China and Vietnam are the major competitors to India in tea exporting field. China is the major producer of green tea while Sri Lanka and Indonesia are producing mainly orthodox varieties of tea. Tea industry in India occupies an important place in the national economy since last 172 years. It is an essential item of domestic consumption. Tea is also considered as the cheapest beverage amongst the beverages available in India.

Root-type vegetables are a diverse group of underground plant structures that are edible and serve as a vital source of nutrition for humans. These vegetables can be further categorized into two main types: true roots, such as carrots, beets, turnips, and radishes, which are modified taproots that store food; and tuberous roots, such as Potatoes, sweet potatoes and yams, which are modified
stems that store food. A root is a compact, often enlarged storage organ with hairy stems that develops from root tissue. So a tuber is a root crop, but a plant can be a root and not a tuber. Carrots and cassava are root vegetable crops. Potatoes, sweet potatoes and yams, on the other hand, are edible tuber crops (Fig. 5.1).
The primary difference in propagation lies in the plant part used: tubers, like potatoes, are propagated from modified stems or roots with “eyes” (nodes) that sprout, while root crops, like carrots, are propagated from seeds or root cuttings, as their roots don’t have these propagation points. Another major difference is that tubers will have long shelf life compared to roots.
• Tubers
• Origin: Tubers are modified stems or roots that store nutrients.
• Propagation: They can be propagated vegetatively by using pieces of the tuber that contain “eyes” (nodes) which sprout and grow into new plants.
• Examples: Potatoes, sweet potatoes, and cassava.

Beans play a vital role in India’s agricultural sector and food security. In addition to their nutritional and economic importance, beans also play a crucial role in maintaining soil fertility and promoting sustainable agriculture practices in India. Beans are legumes, which mean they have the ability to fix nitrogen in the soil, reducing the need for synthetic fertilizers and promoting
soil health. India is a significant producer of various types of beans, which are widely used as vegetables in the country. These beans are not only a good source of protein, fiber, and other essential nutrients but also play a crucial role in the country’s agricultural sector.

They are grown in various parts of the country, with major production areas including Punjab, Haryana, and Uttar Pradesh. According to the Indian Ministry of Agriculture and Farmers Welfare, the country produced over 1.4 million metric tons of kidney beans in 2020-21. Kidney beans are an essential ingredient in many popular Indian dishes, such as rajma masala, and are also used in salads, soups, and stews.

Agroclimatology plays a vital role in the cultivation and production of creeper vegetables in India. Creeper vegetables, such as cucumber, bitter gourd, and bottle gourd, are an essential part of Indian cuisine and are grown extensively throughout the country. With its diverse climate and geographical conditions, India offers a suitable environment for the growth of a wide range of creeper
vegetables.
In terms of area and production, creeper vegetables account for a significant share of the total vegetable production in India. According to the Ministry of Agriculture and Farmers Welfare, Government of India, the area under creeper vegetable cultivation has been increasing steadily over the years, with a corresponding rise in production. This trend is attributed to the growing
demand for these vegetables, both domestically and internationally.
Creeper vegetables are not only an important source of nutrition but also contribute significantly to the country’s economy. They are a vital source of income for many small and marginal farmers, who cultivate these crops on a large scale. Moreover, the export of creeper vegetables earns significant foreign exchange for the country.
The importance of creeper vegetables in India can be gauged from the fact that they are an integral part of various traditional and cultural festivals. For instance, bitter gourd is considered a auspicious vegetable in many Indian communities and is often prepared during special occasions.

India’s diverse climate and geography provide a favorable environment for growing a wide range of fruit-type vegetables, including eggplant, tomato, okra, and chillies. These crops are not only essential for food security but also contribute significantly to the country’s agricultural economy. To optimize the production and productivity of these crops, it is crucial to understand their agroclimatic requirements.
Fruit-type vegetables have specific temperature requirements for growth and development. For instance, eggplant and okra require warm temperatures between 20-30°C (68-86°F) for optimal growth, while tomatoes prefer a slightly cooler temperature range of 15-25°C (59-77°F). Chilli peppers, on the other hand, thrive in temperatures between 20-35°C (68-95°F). Adequate moisture is also essential for the growth and development of fruit-type vegetables. Eggplant, okra, and chilli peppers require consistent moisture, especially during the fruiting stage, while tomatoes require a slightly drier soil condition. The ideal annual rainfall for these crops ranges from 600-1,200 mm, with supplemental irrigation provided during periods of drought.
Weather conditions, such as sunlight, wind, and frost, also play a crucial role in the growth and development of fruit-type vegetables. Most fruit-type vegetables require full sun to produce well, while excessive wind can damage plants and reduce yields. Frost, on the other hand, can be detrimental to these crops, and frost-free periods are essential for optimal growth. India‘s diverse
climate and geography result in regional variations in agroclimatic conditions. For instance, the Indo-Gangetic Plains, which cover parts of Uttar Pradesh, Bihar, and West Bengal, have a subtropical climate with hot summers and cold winters. In contrast, the Deccan Plateau, which covers parts of Maharashtra, Karnataka, and Telangana, has a tropical climate with warm summers and mild winters. Understanding these regional variations is essential for optimizing the production and productivity of fruit-type vegetables. The agroclimatic conditions suitable for growing different fruit type vegetables are given in this chapter.

Black pepper (Piper nigrum L.), famous as “Black Gold” and also known the “King of Spices” is the most important agricultural commodities of commerce and trade in India. It is the most important, most popular and most widely used spice in the World. Of the total spices traded internationally, black pepper accounts for 34 per cent. South West India is the traditional home of this important spice, particularly the Malabar Coast. Black pepper is also grown in tropical zones such as the Asia Pacific Region, mainly India, Indonesia, Malaysia, Sri Lanka, Thailand, China, Vietnam and Cambodia. Outside the Asia Pacific region, the crop is distributed in Brazil, Mexico, Guatemala, etc., totaling about 26 countries. It is grown successfully between 20°N and 20°S latitude and from mean sea level to 1500 meters above sea level. World’s black pepper production varies in the range of 2.7 to 3.35 tonnes annually. The major production share is contributed by Vietnam with an annual production of 80,000 tonnes. About 85 per cent of the World trade of pepper is determined by the largest pepper producing countries in the International Pepper Community (IPC). World export fluctuates around 1.5–2.5 lakhs tonnes per annum. Global black pepper supply has shown a drastic increase over last ten years except in 2008–09. Vietnam’s sudden increase in production has resulted in the massive global out put of 3–3.5 lakhs metric tonnes from 1.9–2.0 lakhs metric tonnes in late nineties. 

Vegetable crops stand as pillars of global food security and human health, providing essential vitamins, minerals, and dietary fiber crucial for well-being. The interaction between vegetables and their climate is a dynamic and multifaceted one. From the moment a seed germinates to the final harvest, every stage of a vegetable plant’s lifecycle is profoundly impacted by factors such as temperature, precipitation, solar radiation, humidity, and wind. Understanding these influences is no longer merely academic; in an era marked by increasing climate variability and the urgent need for sustainable agricultural practices, it has become a fundamental necessity for ensuring consistent and reliable vegetable production (Fig. 1.1).

• Fundamental Climatic Parameters and Their Impact: A thorough examination of how temperature regimes, rainfall patterns, solar radiation intensity and duration, humidity levels, and wind patterns affect key physiological processes in vegetable plants, such as photosynthesis, respiration, transpiration, and nutrient uptake.

Arabica coffee is reported to have originated in the tropical rain forests in Ethiopian highlands while Robusta is a native of the humid tropical lowlands of Central Africa, probably, Uganda. The major coffee producing countries
across the World are distributed between 23°N and 23°S of the equator. Beyond these latitudinal limits, temperature becomes a major limiting factor as coffee plants are sensitive to extreme temperature regimes. Thus within
the latitudes, altitude becomes a major factor. In areas, nearer to the equator, coffee plants require higher altitudes when compared to farther north and south (6.1 plate). The world’s largest coffee producer is Brazil with around 30% of total world output of coffee. Columbia comes in second with around two thirds of Brazil’s production. India is the sixth largest (after Brazil, Columbia, Vietnam, Indonesia and Ethiopia) producer of coffee. Coffee is reportedly introduced into the Western Ghats regions of South India around 1600 AD. However, commercial cultivation of coffee was opened in South India with the British enterprise and investment during late 1820s. Coffee occupies an important position among the plantation crops in India. It is cultivated mainly in the traditional States of Karnataka, Kerala, Tamil Nadu and to some extent in non-traditional areas viz., Andhra Pradesh and Orissa as well as in North Eastern States viz., Assam, Manipur, Meghalaya, Mizoram, Tripura, Nagaland and Arunachal Pradesh. Coffee in India is unique. Almost all coffee plantation are grown under the shade of forest/planted trees, where as it is grown under open conditions in all the major producing countries viz., Brazil, Vietnam and Columbia.

Small cardamom (Elettaria cardamomum Maton), popularly known as the “Queen of spices”, occupies an important position among the foreign exchange earning commodities. It is cultivated on a commercial scale in Sri
Lanka, Guatemala, Tanzania and Papua New Guinea. Guatemala is the largest producer of cardamom in the World. In India, it is confined to the States of Kerala, Karnataka and Tamil Nadu. Among these States, Kerala
accounts for the major portion of production (58.4 %), followed by Karnataka (35.2 %) and Tamil Nadu (6.4 %). In Kerala, Cardamom is mainly grown in the erstwhile Travancore area in Idukki district and it is known as the Cardamom Hill Reserve (CHR). Cardamom is a native of the moist evergreen rain forests of the Western Ghats and is grown extensively in the hilly regions at elevations of 700 to 1300 metres as an under crop in forest lands. Cardamom thrives well within certain maximum and minimum thermal regimes. It is believed that diurnal symmetries in temperature trends, if any, have close links with the changes in cloudiness, humidity, atmospheric circulation pattern, winds and soil moisture. The land use pattern of cardamom tracts has changed to a great extent in recent decades. Crops like coffee, black pepper and areca nut are being cultivated at many locations in place of cardamom. With denudation of forests in many cardamom areas, the ideal cool humid microclimate has been destabilized and adversely affected the productivity of the crop.

Cocoa is popularly known as cacao in many cocoa growing nations. Cocoa beans are the source of commercial cocoa. The cocoa products viz., cocoa liquor, cocoa butter, cocoa cake, cocoa powder and cocoa chocolate are widely consumed across the World. Cocoa powder is essentially used as flavour in biscuits, ice cream, dairy drinks and cakes. Apart its use as flavour it is also used in the manufacture of coatings for confectioners or frozen desserts. Cocoa powder is also consumed by the beverage industry for example for the preparation of chocolate milk. Besides the traditional uses in chocolate manufacture and confectionery, cocoa butter is also used in the manufacture of tobacco products, soap and cosmetics. It is also a folk remedy for burns, cough, dry lips, fever, malaria, rheumatism, snakebite and wounds. It is reported to be antiseptic and diuretic. Looking at the industry needs for various purposes, there is a heavy demand for cocoa. At present, the gap between supply and demand in cocoa appears to be more at the national level. To fill the gap, various agro-technologies and crop improvement strategies are to be chalked out, for which the response of the crop to various environmental factors are to be understood. Weather aberrations during the flowering and fruiting result in the final cocoa production. Therefore, it is important to understand the effect of weather on flowering and fruiting pattern of cocoa to minimize the crop losses against the weather abnormalities. Though it is known that cocoa yield is highly variable and sensitive to various weather factors, the studies on crop weather relationships in cocoa and its response to climate change/variability are relatively scant

Pollution emanating from industrial units has become a major problem globally and it is generally monitored by some government agencies. These agencies enforce various laws and regularly carry out checks at the industrial units. Same is true with regards to slaughterhouses or abattoirs. Pollution parameters are parameters against which the effluents coming out of the Effluent Treatment Plant (ETP) of slaughterhouse or any industrial entity is measured against. Effluent generated during various processes of the slaughterhouse is directed towards the ETP and it undergoes different processes to reduce the pollutants level in the effluent. Then, the effluent is tested against the pollution parameters and the effluent must have less than the maximum permissible level of the pollution parameters. The effluent must not have more than the permissible maximum level of the pollutants after coming out of ETP before being discharged into the municipal sewage system or some natural water bodies.

The Coconut palm, also known as the Cocos Nucifera L., is one of the most fascinating and beautiful palms in the world. The coconut is believed to have originated in southeast Asia (Indonesia, Malaysia, Philippines) or Micronesia. Coconut has been cultivated in India since ages and plays an important role in social, economic and cultural activities of the people. The palm is amenable to both plantation and homestead management and it can be either a major crop or a minor one in a homestead garden of mixed crops. While responding favourably to scientific management, the palm also tolerates negligent farming to a certain extent. Thus, it can adapt to the divergent farming situations and management practices that are prevalent in different agro-climatic regions. The coconut palm is usually found near the sea on sandy beaches where it can tolerate salt spray and brackish soils. It is also grown under different soil types such as loamy, laterite, coastal sandy, alluvial, clayey and reclaimed soils of the marshy low lands. The ideal soil conditions for better growth and performance of the
palm are proper drainage, good water holding capacity, and presence of water table within three metres and absence of rock or any hard substratum within two meters of the surface. The coconut palm can also grow well inland, within altitudinal limit of 600 m to 1000 m in the Tropics. It requires an equatorial climate with high humidity. A year-round warm and humid climate favours thegrowth of coconut. The palm does not withstand prolonged spells of extreme weather/climate variations under rain fed conditions. A welldistributed rainfall of 1300–2300 mm per annum is preferred. It is known as a coastal tree since it is grown along the Coasts and Islands and does not tolerate high diurnal temperature range, that is the difference between the maximum and minimum temperatures.

‘Scotoma effect’ or ‘factory-blindness’
• Persons working in any factory or abattoir on routine basis slowly and slowly becomes unaware (mentally ‘blind’) about any sub-standard hygiene or cleanliness problem existing in the surrounding
• This effect is known as ‘scotoma’ or ‘factory-blindness’
• Effect can be powerful and the any visitors to that factory or abattoir will instantly notice that sub-standard hygiene or cleanliness problem neglected by the persons working there

Cashew (Anacardium occidentale L.) is a native of Brazil and was introduced in India by the Portuguese during the16th Century. It is grown in India, Brazil, Vietnam, Tanzania, Mozambique,
Indonesia, Sri Lanka and other tropical Asian and African countries. The crop is grown within the latitudinal belt of 27°N and 28°S of the equator experiencing the tropical climates for its growth and development. It is categorised under one of the plantations along the West and East Coasts. To a limited extent cashew is cultivated in Gujarat, Chattisgarh, Manipur, Meghalaya, Tripura, Andaman and Nicobar Islands. The crop is mostly grown in low and midlands along the West and East Coasts of India in sandy and laterite soils. Since it is mostly grown along the Coast across the Country it is also known as the Coastal Tree. Cashew grows along the West and East Coasts of India from South to North, lying between 09°N and 23oN latitudes. Though it grows beyond 23°N latitude, its production is relatively low as the reproductive phase coincides with cold injury/low temperature during
winter (December-February). Being a tropical coastal tree, it cannot thrive under low winter temperature. There is significant yield variation in cashew among the different agroclimatic zones of the country. Year-to-year yield variation is also significant as the crop is weather sensitive. This crop may come up even in waste lands with specific crop management practices along the West Coast and as a shelter belt and wind break along the East Coast.

Physicochemical parameters of meat
1. Moisture, ash and fat content
• Meat samples are dried at 105 °C for 24 h for determining the moisture content and for ash content analysis, samples are burned at 525 °C
• Fat determination is done by acidic hydrolysis of the sample
• Sample is boiled initially and then cooled and later, it is filtered, washed and dried
• Thereafter, petroleum ether is used to extract the fat
• Ether is evaporated and the remnant is dried and weighed
2. Protein content
• Often, protein in meat sample is estimated using Kjeldahl method
• The protein content is determined by multiplying the nitrogen content in the meat sample by an appropriate conversion factor
• Strong acid is used to digest the meat sample and the released nitrogen is measured by proper titration technique
• Then, the protein quantity of the sample is determined from the nitrogen concentration of the meat
• Kjeldahl method does not determine the protein content in straightway manner; a conversion factor (F) is required to convert the nitrogen content to protein content
• Usually, a conversion factor of 6.25 (corresponding to 0.16 g nitrogen/g of protein) is used for several food samples

Coconut, cocoa (cacao), coffee, cashew, cardamom, black pepper, tea, rubber, oil palm and areca nut are the major plantation crops that are perennially grown along the coastal belt in southern States of the Country and to some extent in high rainfall zones of the northeastern States of India. These crops are also known as perennial crops. The life span of these crops varies from fifteen to sixty years or more depending upon the crop and its management. Coconut and cashew are also popularly known as the coastal trees. Cardamom and black pepper are also known as the spice crops. Once these plantation crops are well established, they mature for fruiting in three to eight years depending upon the nature of plantation crops and the crop management. The reproductive phase is seen round-the-year in case of coconut and cocoa. Cashew is one of the plantation crops with seasonality in fruiting from September to June. Cocoa is mostly grown as an intercrop in coconut gardens and in some pockets as a pure crop. Black pepper is trained to coconut and areca nut in many locations and seen as mono crop as well. All these crops are grown in laterite, sandy and alike in well drained soils. The hill slopes with terrace cultivation are also suitable for all the plantation crops. Tea, coffee and cardamom are seen on hillocks extending up to the base. Some of the plantation crops are seen in multitier cropping system as well as mixed/intercrops/homestead gardens. They are grown mostly under the rain fed and summer irrigation is beneficial for better harvest. The plantation crop distribution, production and productivity are influenced by air temperature, rainfall and the other meteorological variables viz. sunshine, cloud cover, solar radiation, vapour pressure, evapotranspiration, humidity and wind. Interestingly, coffee spread in Wayanad District while cardamom in Idukki District. Coffee experiences unimodel rainfall while bimodal in the case of cardamom.

Storage of fresh meat without microbiological degeneration at temperature more than freezing point of meat is known as ‘conditioning’ or ‘ageing’ and it is said to enhance tenderness and flavor of the meat Conditioning is also known as ageing or proteolysis of meat
• In the initial 24–36 h after the slaughter, glycolysis is the prevailing reaction going on during post-mortem
• The organization of the contractile proteins can only be conserved by the constant supply of ATP (energy source)
• But ATP supply becomes scarce with the passage of time after death and denaturation of the proteins starts
• Denaturation is a physical or intramolecular reorganization without involving hydrolysis of the bonds occurring between the various amino acids of the polypeptide proteins chains
• Denaturation is characterized by heightened reactivity of different chemical groups, a modification in molecules shape or size, reduced solubility and lost biological reactivity in cases of enzymes or hormones
• In the course of post-mortem conditioning, proteins are prone for denaturation due to lower pH than in-vivo, temperatures more than 25 °C or less than 0 °C, dehydration and higher non- hysiological salt levels
• Connective tissue proteins such as collagen and elastin do not undergo denaturation during conditioning

Post-mortem glycolysis (anaerobic glycolysis)
• Post-mortem glycolysis is the basic function of muscle
• Irreversible anaerobic glycolysis starts after the animal has died and oxygen supply to the muscles is cut
• The various biochemical steps that occur in living animals for the conversion of glycogen into lactic acid when the oxygen supply is insufficient, are basically similar in slaughtered animal also
• After slaughter, during anaerobic glycolysis in normal animals (not in the animals that are exhausted, excited or excessively exercised just prior to slaughter), the glycogen reserve of the muscle decreases appreciably resulting in the lactic acid production which will proceed to a pH level at which the enzymes involved in glycolysis become inactivated
• In classic mammalian muscles this pH will be near to 5.4–5.5 (called Ultimate pH)
• Muscle having almost 600 mg glycogen/100 g muscle at the time of slaughter will reach this pH
• A protein called glycogenin is responsible for starting the glycogenesis (glycogen synthesis) in muscle and it binds with eight glucose molecules to produce a glycosyl-protein (Fig. 12.1)
• Glycosyl-protein is used as primer by the enzyme proglycogen synthase and thus, proglycogen is formed
• This proglycogen is converted into bigger macromolecule by the macroglycogen synthase and its branching enzyme

Introduction
The genetic code and protein synthesis are fundamental processes that underlie the
expression of genetic information within all living organisms. These processes are integral
to understanding how DNA, the hereditary material, dictates the production of proteins,
which are essential molecules that carry out various functions in the body, from structural
support to catalyzing biochemical reactions.
Genetic Code
The genetic code consists of rules that guide the translation of information stored in
DNA or RNA sequences into proteins within living cells. It is nearly universal across
all organisms, underscoring the shared evolutionary origins of life. The genetic code is
composed of codons, which are sequences of three nucleotides in mRNA (messenger
RNA) that correspond to specific amino acids or stop signals during protein synthesis.
Each of the 20 amino acids used in protein synthesis is encoded by one or more codons.
For instance, the codon AUG not only codes for the amino acid methionine but also serves
as the start signal for translation, marking the beginning of a protein-coding sequence. The
redundancy of the genetic code, where multiple codons can specify the same amino acid,
provides a protective mechanism against mutations, as some changes in the nucleotide
sequence do not alter the resulting protein.
Protein Synthesis
Protein synthesis is the process by which cells construct proteins based on the instructions
encoded in mRNA. This process takes place in two primary stages: transcription and
translation.
Transcription: Transcription is the first step of gene expression, where a particular segment
of DNA is copied into RNA by the enzyme RNA polymerase. During transcription, one
of the two DNA strands serves as a template for the formation of a complementary RNA
strand, This newly synthesized RNA strand, known as pre-mRNA, undergoes further
processing, including splicing, capping, and addition of a poly-A tail, to become mature
mRNA, which is then exported from the nucleus to the cytoplasm in eukaryotic cells. In
contrast, in prokaryotes, both transcription and translation occur within the cytoplasm.

Constituents of meat
i. Water- 75%
ii. Protein- 19%
iii. Soluble and non-protein substances- 3.5%
iv. Fat- 2.5%
• The muscle fibre is important unit of muscular tissue consisting of
a) Myofibrils- formed protein structures embedded in sarcoplasmic fluid
b) Sarcoplasmic reticulum- a fine system of tubules
c) Sarcolemma- a very thin membrane surrounding the myofibrils and around the exterior side of this membrane, the connective tissue is found
• 19% of protein in the muscle is muscle fibre (Table 11.1)
• α-alanine, glycine, glutamic acid and histidine are the major free amino acids present in the fresh muscle

Introduction
• Arrival of the nerve stimulus at the motor end plate result in reversal of the polarization of the sarcolemmal surfaces and the muscle gets activated
• This causes momentarily loss of potassium and sodium ions impermeability by the sarcolemma and Ca++ ions combined with calsequestrin in the sarcotubular system gets dissociated bringing Ca++ ion equilibrium with the sarcoplasm
• The junctional foot protein (JFP) and the L-type calcium channel (LTC) are the two big protein complexes responsible for the calcium release mechanism (Fig. 10.1)
• This leads to increase in level of Ca++ ion from nearly 0.10 mM to 10 mM
• Thus, troponin C, the calcium-binding site of the troponin complex becomes saturated bringing a structural modification resulting in interaction of actin with the MgATP2- on the H-meromyosin heads of the myosin molecule as the troponin I, the inhibitory protein, no more inhibits this interaction
• The interaction of actin with the MgATP2- intensely activate contractile ATP-ase near the bonding leading to break down of MgATP2- to MgADP– at a greater rate and liberating energy for inward (towards the sarcomere center) pulling of the actin filament
• This leads to breaking of bond between actin and myosin and thus, the myofibrillar part involved in above mentioned activity gets contracted

Investigating Physiological Processes
Experimental physiology aims to explore how organisms function at the cellular, molecular, organ, and systemic levels. This field investigates both normal physiology and the mechanisms behind diseases, offering insights into how organs and systems interact. Laboratory-based experiments are central to this learning process, allowing students and researchers to apply theoretical knowledge to practical scenarios. By observing how
tissues, organs, and entire systems respond to stimuli, experimental physiology enables the exploration of the relationship between structure and function in biological organisms. The practical experience gained in the lab is critical for medical and veterinary education, as theoretical knowledge alone is insufficient. In fields like physics and chemistry, materials can often be stored for future use. However, in biology, especially physiology, fresh
live tissue is often needed for fundamental experiments. For example, muscle and nerve tissues require careful handling and immediate use after isolation to study their responses to electrical stimuli. In in vivo experiments, live organisms are studied in their natural context, while in vitro studies use isolated cells, tissues, or organs to understand their behavior in a controlled environment.

Muscle structure
• All muscles are composed of muscle fibres which are the structural unit of muscles
• In turn, every single muscle fibre is made up of numerous smaller components called myofibrils
• Functional unit of myofibril is sarcomere
Connective tissues associated with muscle
• Whole muscle is surrounded by a sheath of connective tissue called epimysium
• Whole muscle is divided into muscle bundles by perimysium formed out of connective tissue septa originating from the interior surface of the epimysium separating the muscle fibres
• The perimysium contains the blood vessels and nerves

Fat
• Utmost significant slaughterhouse byproduct is fat obtained from intestines, kidneys, channel and other offals
• Edible ox fat is rendered and the obtained product is called premier jus (higher grade fat) which is differentiated into oleo oil and oleo stearin
• If all edible ox fat is rendered, it is called dripping and it used for human consumption
• Inedible fat is used for soap manufacturing
• The highest value fat from pig is recovered from peritoneal lining (leaf fat), and the subsequent highest value recovered from back fat, mesentery and omentum
• Sheep fat is separated into oleo oil and oleo stearin because of its strong flavour
• Mutton fat is harder and its stearin content is more than ox or pig and therefore, it is applied on the top of meat paste glass jar as a protective layer
Rendering of edible fat
Three principal procedure of rendering of edible fat are:
i. Wet rendering
ii. Dry rendering
iii. Continuous low-temperature rendering

Introduction
The renal system is primarily responsible for the filtration of waste products from blood plasma through urine production. The kidneys, along with the ureters, bladder, and urethra, are part of the urinary system responsible for removing waste products from blood and eliminating them in urine. They filter around 120 ml of blood plasma per minute and perform homeostatic roles such as regulating blood volume and pressure, pH and electrolyte
composition, stimulating erythropoiesis, and supporting vitamin D biosynthesis. Nephrons, with around 1-1.3 million per adult kidney, are primarily cortical, with 80-85% of them located in the renal cortex. The remaining 15-20% are called juxtamedullary nephrons. The kidneys remove nitrogenous compounds like urea, uric acid, and creatinine, as well as metabolic waste products, toxins, excess hormones, water, and electrolytes. Urine formation involves three main stages: glomerular filtration, tubular reabsorption, and secretion. The kidneys produce renal filtrate, which contains blood components that can be filtered out, and the body recovers 99% of the water and electrolytes from the filtrate. The renal corpuscle, comprising the Bowman’s capsule and glomerular capillaries, is responsible for filtration of blood plasma and producing renal filtrate. Its structural elements allow
for efficient filtration, with glomerular capillaries having a 100-fold greater permeability to water, small ions, and solutes. The glomerular capillaries also have increased pressure due to the smaller diameter of the efferent arteriole. The filtration membrane consists of endothelium, basement membrane, and podocytes. The proximal convoluted tubule in the kidneys plays a crucial role in reabsorption of water and electrolytes, including sodium,
chloride, potassium, calcium, and bicarbonate. It reabsorbs approximately 80% of filtered bicarbonate, with further reabsorption from the loop of Henle and distal convoluted tubule. This reabsorption regulates the body’s acid-base balance, contributing to the acidic nature of urine. The proximal convoluted tubule is the only region able to reabsorb glucose. The loop of Henle is a crucial region in the kidney, responsible for concentrating urine and facilitating water and electrolyte reabsorption. It regulates fluid volume, blood pressure, and acid-base balance through bicarbonate reabsorption. The loop consists of two main regions: the descending limb and the ascending limb.

Introduction
• Slaughtering of meat animals in way so as to effect minimum pain and suffering to animals is referred as humane slaughter
• Slaughtering method followed should inflict least stress and suffering to the animals
• There are acceptable and the unacceptable slaughtering methods and there is no ‘nice’ method to slaughter the food animals
• In advanced countries, common slaughtering method consists of two steps, stunning and bleeding
• Stunning is done to make animal unconscious and not to feel the pain during actual bleeding process which is followed next
• Exception of stunning-- Jewish and Muslim methods of slaughter
Stunning
Humane slaughter consists of stunning followed by sticking (bleeding). Stunning is the process of making the animal unconscious till it is slaughtered so that the pain suffered during actual act of slaughtering can be alleviated

Introduction
The skin, also known as the integumentary system, is the largest organ of the human body and protects animals from external factors. It consists of different tissues (epidermis, dermis, hypodermis, glands, hair and nails) and plays an important role in maintaining homeostasis, especially in regulating body temperature, protecting the body from damage and sensing the outside world. The skin consists of three main layers: epidermis, dermis and subcutaneous tissue; each has its own specific function. The epidermis is the outermost layer of keratinocytes that produce keratin as a protective layer. The dermis, beneath the epidermis, is rich in collagen and elastin, which give the skin strength and elasticity. The subcutaneous tissue beneath the dermis consists of fatty tissue and acts as an insulator for the body. Dermal fibroblasts are the primary cells that synthesize and maintain the skin’s extracellular matrix, contributing to its structural integrity and function. The integumentary system also plays an important role in regulating temperature, providing sensation, synthesizing biochemicals, absorbing nutrients, and protecting the body from various types of damage. In general, the integumentary system plays an important role in the body’s overall health and function by regulating body temperature, providing a sense of well-being, producing important biochemicals, absorbing nutrients, and protecting the body from external factors.
